Located on Stanley Street East, Egg bistro features a huge timber counter from an old English pub, giving it a traditional feel. Brisbane Commercial Kitchens worked with the owner/chef to design and construct the kitchen that produces the area’s finest breakfast cuisine.
Formerly an antique shop, space for the restaurant was at a premium. Due to this the kitchen needed to be compact but functional.
Baron 700 Series cooking equipment was the client’s choice due to its robust build quality. With its generous burner spacing a 1200mm wide 6 burner cooktop with maxi oven under allows maximum use of all burners, and is located beside a Baron 800mm wide smooth griddle plate. This configuration allows the two chefs to work alongside at the same time. A Baron salamander was also installed.
The available space did not allow for the luxury of a coldroom so large volume, full stainless steel Inomak upright fridges were installed. An island prep bench also houses under counter refrigeration.
There was also not enough room to include a full sized dry store in the kitchen. The only solution was to install full perimeter stainless steel wall shelving to make use of every inch of available wall space for dry storage.
With the food preparation, cooking and refrigerated storage areas taking up so much room we still needed to find a spot for the warewashing to be done. A large sink bowl with an undercounter dishwasher was installed to provide a compact scullery solution.
The front of house espresso/bar counter area is larger and houses a 2 group espresso machine, four door under counter refrigerator, glass washer, single door freezer and a Purezza reticulated water system that provides sparkling, chilled or still water.
Egg Bistro’s small kitchen is extremely effective and provides all the tools required to create the beautiful food that has Brisbane’s breakfast crowd booking tables far in advance.
